These delicious chickpea patties are enriched with carrots and make a perfect addition to any mezze platter.

Ingredients:

- 400 g chickpeas (cooked or canned)
- 1 medium carrot, grated
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 dl fresh herbs (e.g., parsley or coriander), chopped
- 1 tsp cumin
- 1 tsp paprika powder
- Salt and pepper to taste
- 1 dl breadcrumbs
- 1 egg (or 2 tbsp chia seeds + 6 tbsp water for a vegan version)
- Oil for frying

Instructions:

1. Rinse the chickpeas thoroughly and drain them.
2. In a bowl, combine the chickpeas, grated carrot, onion, garlic, herbs, cumin, paprika, salt, and pepper.
3. Mash the mixture with a fork or a potato masher until it is somewhat smooth but still retains some texture.
4. Stir in the breadcrumbs and the egg (or chia mixture) until well combined.
5. Form the mixture into about 8-10 patties.
6. Heat oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown.
7. Remove the patties and place them on paper towels to drain excess oil before serving.
