Delicious chickpea patties infused with grated carrots, perfect for a mezze platter. Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 400 g canned chickpeas - 1 medium carrot (grated)
- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 100 g breadcrumbs
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp fresh parsley (chopped)
- 2 tbsp olive oil (for frying)
Instructions:
1. Rinse and drain the chickpeas. Lightly mash them using a food processor or potato masher, leaving some texture.2. Add the grated carrot, chopped onion, minced garlic, breadcrumbs, cumin, paprika, salt, pepper, and parsley. Mix well until combined.
3. Shape the mixture into small patties.
4. Heat olive oil in a skillet over medium heat. Fry the patties for about 3-4 minutes on each side until golden brown.
5. Serve warm, either as part of a mezze platter or alongside a salad.
