Ingredients:

- 1 large eggplant
- 2 tablespoons olive oil
- 1 cup tomato sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil leaves for garnish

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Slice the eggplant lengthwise into 1 cm thick pieces.
3. Place the eggplant slices on a baking sheet and drizzle with olive oil. Season with salt and pepper.
4. Roast the eggplant in the oven for about 15 minutes, until tender.
5. Remove the eggplant from the oven and spread tomato sauce over the slices.
6. Sprinkle mozzarella and Parmesan cheese on top along with dried oregano.
7. Bake the pizza in the oven for another 10 minutes, until the cheese is melted and golden.
8. Garnish with fresh basil leaves before serving.
