Ingredients:
- 1 large cucumber
- 1 package of vermicelli or other thin rice noodles
- Vinegar
- Soy sauce
- Salt
- Sugar
- Chili powder
Instructions:
1. Bring a large pot of water to a boil and cook the vermicelli or rice noodles according to the package instructions. Drain and rinse with cold water.
2. Slice the cucumber into thin rounds.
3. In a bowl, mix vinegar, soy sauce, salt, sugar, and chili powder to taste.
4. Combine the drained noodles and cucumber with the dressing. Mix well.
5. Let the salad chill in the refrigerator for about 10 minutes before serving.
