Serving Size: 4 servings
Ingredients:
- 150 g mixed greens (such as baby spinach, arugula) - 1 avocado
- 100 g cherry tomatoes
- 1 cucumber
- 50 g feta cheese
- 100 ml balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Rinse and dry the mixed greens. 2. Cut the avocado in half, remove the pit, and peel it. Slice into wedges.
3. Halve the cherry tomatoes and slice the cucumber.
4. Combine all salad ingredients in a large bowl.
5. Prepare the dressing by mixing balsamic vinegar, olive oil, salt, and pepper.
6. Drizzle the dressing over the salad and toss gently.
7. Crumble feta cheese over the top before serving.
