Ingredients:
- 200 g pasta (e.g., spaghetti or fusilli) - 1 bell pepper (red or yellow)
- 1 zucchini
- 1 small onion
- 2 garlic cloves
- 200 g cherry tomatoes
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. 2. Dice the bell pepper, zucchini, and onion into small cubes. Mince the garlic.
3. Heat olive oil in a frying pan over medium heat. Add the onion and garlic, sautéing until soft.
4. Add the bell pepper and zucchini to the pan, cooking for about 5 minutes.
5. Add the cherry tomatoes and continue to cook until they are soft.
6. Drain the pasta and add it to the vegetable mixture. Stir well to combine.
7. Season with salt and pepper. Serve garnished with fresh basil and Parmesan cheese if desired.
