A fresh and delicious spring salad that's perfect as a side dish or a light main course. Preparation Time: 15 minutes
Serving Size: 2-4 servings
Ingredients:
- 1 head of lettuce
- 2 tablespoons arugula
- 1 tablespoon honey
- 1 tablespoon canola oil
- 1 tablespoon white wine vinegar
- 100 g watercress
- 3 cherry tomatoes
- Fresh pea shoots and/or sunflower sprouts
- Fresh thyme leaves
Instructions:
1. Prepare the dressing: In a bowl, mix honey, canola oil, and white wine vinegar. Season with fresh thyme leaves.
2. Rinse and drain the lettuce, arugula, watercress, and pea shoots.
3. Halve the cherry tomatoes.
4. Combine all the vegetables in a large bowl and mix well.
5. Drizzle the salad with the dressing and serve immediately.
