A lovely, fresh salad that brings the essence of spring to your plate. Perfect as a side dish or a light main course. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 150 g fresh spinach
- 200 g cherry tomatoes
- 1 avocado
- 1 cucumber
- 100 g feta cheese
- 50 g nuts (e.g., walnuts or pine nuts)
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the spinach and place it in a large salad bowl.
2. Cut the cherry tomatoes in half and add them to the bowl.
3. Peel the avocado, remove the pit, and dice it. Add to the bowl.
4. Slice the cucumber and add it to the salad.
5. Crumble the feta cheese over the salad.
6. Add the nuts to the salad.
7. In a small bowl, mix the olive oil and balsamic vinegar, then season with salt and pepper.
8. Drizzle the dressing over the salad and toss gently.
9. Serve immediately and enjoy the flavors of spring!
