A summery and delicious strawberry cake, perfect for celebrating midsummer. This beautiful cake combines sweet strawberries with melt-in-your-mouth pistachio cream.

Serving Size: 8-10 servings

Ingredients:

- 200 g fresh strawberries
- 300 g cake base (e.g., sponge cake)
- 2 dl whipping cream
- 100 g pistachios
- 50 g powdered sugar
- 1 tsp vanilla sugar
- 1 tbsp lemon juice
- Fresh mint leaves for garnish

Instructions:

1. First, prepare the cake base and let it cool completely. Slice it into two or three layers.
2. Gather the strawberries, clean them, and slice them in half or into pieces.
3. Grind the pistachios into a fine crumb.
4. In a bowl, whip the cream until soft peaks form. Gently fold in the pistachio crumbs, powdered sugar, vanilla sugar, and lemon juice.
5. Place the first layer of the cake base on a serving plate. Spread a layer of pistachio cream on top and add a layer of strawberries.
6. Add the next layer of cake and repeat the layers until all ingredients are used. Finish the cake with pistachio cream.
7. Garnish the cake with fresh mint leaves and whole strawberries.
8. Allow the cake to set in the refrigerator for at least 1 hour before serving.
