A delightful addition to your summer grilling, these Korean grilled vegetables bring flavor and color to the table. Preparation time is just 30 minutes, and it serves about 4 people.Ingredients:
- 2 bell peppers (red and yellow)
- 1 zucchini
- 1 red onion
- 200 g button mushrooms
- 3 tbsp gochujang chili paste
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 tbsp olive oil
- 1 garlic clove (minced)
- Sesame seeds (for garnish)
- Fresh cilantro (for garnish)
Instructions:
1. Slice the bell peppers, zucchini, and red onion into strips. Slice the button mushrooms.
2. In a bowl, mix together the gochujang, soy sauce, honey, olive oil, and minced garlic.
3. Add the vegetables to the marinade and toss well. Let them marinate for about 15 minutes.
4. Preheat the grill to medium heat. Grill the vegetables for about 10-15 minutes, until they are tender and have nice grill marks.
5. Serve the vegetables warm, garnished with sesame seeds and fresh cilantro.
