Ingredients:
- 200 g pasta (e.g., spaghetti)
- 100 g bacon or pancetta
- 2 eggs
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain the pasta, reserving a little cooking water.
2. Dice the bacon or pancetta and cook it in a skillet over medium heat until crispy.
3. Add the minced garlic to the skillet and sauté for an additional minute until golden.
4. In a bowl, crack the eggs and mix in the grated Parmesan cheese, salt, and black pepper.
5. Combine the cooked pasta with the bacon mixture and mix well. Remove the skillet from the heat.
6. Pour the egg mixture over the pasta and stir quickly to cook the eggs with the residual heat. If needed, add a bit of reserved cooking water to create a creamy sauce.
7. Serve immediately, garnished with fresh parsley if desired. Enjoy!
