Ingredients:
- 200 g pasta (spaghetti or penne)
- 100 g bacon or pancetta
- 2 egg yolks
- 50 g grated Parmesan cheese
- 1 garlic clove
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.
2. In a pan, heat the bacon or pancetta until crispy. Add minced garlic and sauté for a moment.
3. In a bowl, mix the egg yolks and grated Parmesan cheese. Add a pinch of salt and plenty of black pepper.
4. Drain the cooked pasta and immediately combine it with the bacon and garlic in the pan.
5. Remove the pan from heat and quickly add the egg mixture to the pasta. Stir rapidly to prevent the eggs from scrambling.
6. Serve immediately, garnished with fresh parsley.
