Summer Vegetable Soup (Kesäkeitto)

A refreshing and creamy vegetable soup perfect for warm weather. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 4 potatoes
- 3 carrots
- 2 zucchinis
- 1 onion
- 1 liter vegetable broth
- 200 g green beans
- 200 g peas
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the potatoes, carrots, and onion.
2. In a pot, heat the vegetable broth and add the chopped potatoes, carrots, and onion.
3. Cook for about 10 minutes until the vegetables begin to soften.
4. Add the zucchini and green beans, and cook for another 5-7 minutes.
5. Stir in the peas and cream, mix well, and cook for a few more minutes.
6. Season with salt and pepper to taste.
7. Serve hot and garnish with fresh parsley.
