Ingredients:
- 4 slices of rye bread
- 2 avocados
- 4 eggs
- 100 g smoked salmon fillet
- 1 dl fresh herbs (e.g., dill, basil)
- 1 dl sour cream
- Juice of 1 lemon
- Salt and black pepper to taste
- Olive oil for frying
- Salad leaves (e.g., iceberg or arugula)
- Cherry tomatoes
Instructions:
1. Toast the rye bread slices until golden brown.
2. Mash the avocados and mix in the lemon juice, salt, and pepper.
3. Boil the eggs to your desired doneness and slice them.
4. Spread the mashed avocado on top of the toasted bread.
5. Place the smoked salmon slices over the avocado and add the boiled egg slices.
6. Prepare the sour cream sauce by mixing the sour cream with fresh herbs and season with salt and pepper.
7. Serve the brunch on a bed of salad leaves with cherry tomatoes on the side.
