Ingredients:
- 2 carrots
- 1 bell pepper (any color)
- 1 zucchini
- 1 red onion
- 2 garlic cloves
- 3 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and slice the carrots, bell pepper, zucchini, and red onion.
2. Mince the garlic cloves.
3. Heat the olive oil in a large skillet over medium heat.
4. Add the carrots and red onion first, sauté for about 5 minutes.
5. Add the bell pepper, zucchini, and garlic, continue sautéing for another 10 minutes until the vegetables are tender but still crisp.
6. Season with salt and pepper.
7. Serve immediately, garnished with fresh parsley.
