Ingredients:
- 200 g spaghetti
- 100 g bacon (or pancetta)
- 2 eggs
- 50 g Parmesan cheese (grated)
- 1 garlic clove (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Cut the bacon into small pieces and fry in a pan over medium heat until crispy. Add the minced garlic and cook for an additional minute.
3. In a bowl, crack the eggs and whisk in the grated Parmesan cheese. Season with salt and black pepper.
4. Drain the pasta, reserving a little cooking water. Add the pasta to the pan with the bacon and garlic.
5. Remove the pan from heat and quickly add the egg mixture to the pasta, mixing well to ensure the eggs cook gently without scrambling. If necessary, add a bit of reserved pasta water to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
