Ingredients:
- 500 g carrots - 1 apple
- 1 onion
- 2 garlic cloves
- 1 liter vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the carrots, apple, and onion into small pieces. 2. Heat the olive oil in a pot over medium heat. Add the onion and garlic, and sauté for about 3-4 minutes.
3. Add the chopped carrots and apple to the pot. Cook for a few more minutes.
4. Pour the vegetable broth into the pot and bring it to a boil. Lower the heat and let the soup simmer for about 20 minutes until the carrots are tender.
5. Blend the soup with an immersion blender or in a blender until smooth.
6. Season the soup with salt and pepper. Serve garnished with fresh parsley if desired.
