A cozy autumn soup combining spicy ginger and refreshing orange. This delicious and nutritious soup warms you on chilly days.

Serving Size: 4 servings
Ingredients:
- 500 g carrots
- 1 large onion
- 2 garlic cloves
- 2 tbsp fresh ginger, grated
- 1 orange (juice and zest)
- 750 ml vegetable broth
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh coriander for garnish (optional)
Instructions:
1. Peel and chop the carrots, onion, and garlic.
2. Heat olive oil in a pot over medium heat and sauté the onion and garlic for about 5 minutes.
3. Add the grated ginger and carrots to the pot, and continue to sauté for another 5 minutes.
4. Pour in the vegetable broth and add the orange juice and zest. Bring to a boil and reduce the heat, simmering for about 15 minutes until the carrots are tender.
5. Blend the soup with an immersion blender or in a regular blender until completely smooth.
6. Season with salt and black pepper. Serve the soup hot, optionally garnished with fresh coriander.
