Ingredients:

- 250 g lamb's quarters leaves
- 250 g carrots
- 1 tbsp butter or margarine (or oil)
- 3 tbsp all-purpose flour
- Salt to taste
- (Additional water or vegetable broth for cooking)

Instructions:

1. Rinse the lamb's quarters leaves thoroughly and chop them finely.
2. Peel and dice the carrots into small pieces.
3. Heat the butter or oil in a pot over medium heat.
4. Add the diced carrots to the pot and sauté for a few minutes.
5. Stir in the chopped lamb's quarters leaves and mix well.
6. Sprinkle the flour over the vegetables and stir to absorb the flour.
7. Pour enough water or vegetable broth into the pot to cover the ingredients.
8. Season with salt and let the soup simmer on low heat for about 20-30 minutes, until the carrots are tender.
9. Blend the soup to a smooth consistency if desired.
10. Serve warm, accompanied by fresh bread.
