A creamy and delicious carrot soup with a hint of apple, perfect for a cozy meal. Preparation Time: 35 minutes
Serving Size: 4 servings
Ingredients:
- 5 carrots, peeled and chopped
- 1 dl apple juice
- 1 onion, chopped
- 2 cloves garlic, minced
- 0.5 tbsp butter
- 3 tbsp grated ginger
- 0.6 dl chicken broth (1 chicken bouillon cube)
- 1.5 dl heavy cream
- Salt to taste
- Black pepper, freshly ground
- Chopped parsley (for garnish)
Instructions:
1. In a pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
2. Dissolve the chicken bouillon cube in boiling water to make the broth.
3. Add the chopped carrots and grated ginger to the pot, stirring to combine.
4. Pour in the chicken broth and apple juice, bringing the mixture to a boil.
5. Reduce heat and let the soup simmer for about 20 minutes, or until the carrots are tender.
6. Use an immersion blender to puree the soup until smooth.
7. Stir in the heavy cream and season with salt and black pepper.
8. Bring the soup to a gentle boil once more, tasting and adjusting seasoning if necessary.
9. Serve hot, garnished with chopped parsley. Optionally, add a dollop of sour cream in the center.
