A warming vegetable soup perfect for cold winter days, packed with flavor and nutrients, and easy to prepare. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 tbsp olive oil - 1 onion, chopped
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
- 100 g fresh spinach (optional)
- 100 ml cream or plant-based alternative (optional)
Instructions:
1. Heat olive oil in a large pot over medium heat. 2. Add chopped onion and crushed garlic, sauté for about 3-4 minutes until the onion is soft.
3. Add diced carrots, potatoes, zucchini, and bell pepper. Cook for another 5 minutes.
4. Pour in the vegetable broth and add thyme, salt, and pepper. Bring to a boil.
5. Reduce heat and let the soup simmer covered for about 15-20 minutes until the vegetables are tender.
6. If desired, add fresh spinach and cream, stir well, and heat for a few more minutes.
7. Serve hot with bread.
