Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine) - 150 g bacon or pancetta, diced
- 3 eggs
- 100 g Parmesan cheese, grated
- 2 garlic cloves, crushed
- Salt and black pepper to taste
- Fresh parsley, chopped (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Reserve about 100 ml of the pasta cooking water and drain the pasta.2. Heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy and golden brown.
3. Add the crushed garlic to the skillet and cook for another minute until fragrant.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
5. Combine the cooked pasta and bacon mixture in the skillet. Remove the skillet from heat.
6. Pour the egg mixture over the pasta and quickly toss to allow the eggs to cook gently with the residual heat of the pasta. Add a bit of reserved cooking water if needed for a creamier texture.
7. Serve immediately, garnished with chopped parsley if desired.
