Serving Size: 4 servings
Ingredients:
- 4 large baking potatoes (e.g., Rosamunda)- 200 g shrimp, thawed and drained
- 1 dl sour cream
- 1 tbsp mayonnaise
- 1 tbsp chopped dill
- 2 tbsp chopped leek
- Lemon juice to taste
- Salt and pepper to taste
Instructions:
1. Prick the washed baking potatoes a few times with a fork and place them in the oven. Bake at 200°C (390°F) for about 50 minutes or until the potatoes are tender.2. Finely chop the shrimp.
3. In a large bowl, mix together the sour cream, mayonnaise, chopped dill, and finely chopped leek.
4. Add the shrimp to the mixture and squeeze in lemon juice. Season with salt and pepper to taste.
5. Once the potatoes are cooked, cut them in half and fill them with the shrimp mixture.
6. Serve immediately. This filling is also great on crackers, rye crisps, or bread.
