Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine)
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente.
2. Meanwhile, heat a skillet and cook the bacon or pancetta until crispy. Add minced garlic and sauté for an additional minute.
3. In a bowl, crack the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is done, drain it, reserving a bit of the cooking water. Add the pasta to the skillet with the bacon.
5. Remove the skillet from heat and quickly add the egg mixture to the pasta, stirring vigorously to slightly cook the eggs. Add reserved pasta water as needed to create a creamy consistency.
6. Serve immediately, garnished with fresh parsley and extra cheese if desired.
