This classic Italian pasta carbonara is a quick and delicious meal, perfect for a weekday dinner. Preparation time is just 20 minutes, and it serves four.
Preparation Time: 20 minutes
Servings: 4

Ingredients:

- 400 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)

Instructions:

1. Cook the pasta in salted water according to the package instructions until al dente.
2. Meanwhile, cut the bacon or pancetta into small pieces and fry them in a pan over medium heat until crispy. Add crushed garlic cloves to the pan and sauté for an additional minute.
3. Whisk the eggs and mix in the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is cooked, drain it and save a bit of the cooking water. Add the pasta to the pan with the bacon and mix well.
5. Remove the pan from heat and quickly add the egg mixture to the pasta. Stir until the eggs are slightly cooked from the residual heat, creating a creamy texture. If the mixture is too thick, add a little reserved pasta water.
6. Serve immediately, garnished with fresh parsley if desired.
