Ingredients:
- 1 cup sugar
- 1/2 cup butter (softened)
- 2 eggs
- 1 cup milk
- 3 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- Zest of 1 lemon
- 2 tablespoons lemon juice
Instructions:
1. Preheat the oven to 350°F (180°C). Grease a muffin pan or line it with muffin liners.
2. In a bowl, beat the sugar and butter together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. Pour in the milk and mix until smooth.
5. In another bowl, combine the flour, baking powder, salt, and lemon zest.
6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
7. Add the lemon juice and mix lightly.
8. Divide the batter evenly among the muffin cups, filling them about 2/3 full.
9. Bake in the oven for 20-25 minutes or until the muffins are golden brown and a toothpick inserted comes out clean.
10. Allow the muffins to cool slightly before serving.
