Ingredients:
- 4 eggs - 1 cup sugar
- 1 cup all-purpose flour
- 1/2 cup potato starch
- 1 teaspoon baking powder
- 1/2 cup milk
- 1/2 cup butter, melted
- 2 cups mixed berries (e.g., blueberries and raspberries)
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla sugar
Instructions:
1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan. 2. In a large bowl, beat the eggs and sugar together until the mixture is light and fluffy.
3. In another bowl, combine the all-purpose flour, potato starch, and baking powder. Gradually add the dry ingredients to the egg mixture, alternating with the milk. Stir in the melted butter until smooth.
4. Pour the batter into the prepared cake pan and bake for about 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan.
5. For the berry filling, mix the berries with the heavy cream, powdered sugar, and vanilla sugar.
6. Once the cake is cooled, slice it into two or three layers. Spread the berry filling between the layers.
7. Decorate the top layer with the remaining berry filling and additional berries if desired.
Let the cake set in the refrigerator before serving.
