A delicious and visually stunning dessert perfect for celebrations and special occasions. This cake is filled with a berry filling and topped with whipped cream. Preparation Time: 1 hour + cooling time
Serving Size: 8-10 servings
Ingredients:
- 200 g butter - 2 dl sugar
- 4 eggs
- 5 dl all-purpose flour
- 2 tsp baking powder
- 1 dl milk
- 300 g berries (e.g., blueberries and raspberries)
- 2 dl heavy cream
- 1 dl powdered sugar
- 1 tsp vanilla sugar
- Fresh berries for decoration
Instructions:
1. Preheat the oven to 175°C (350°F). Grease and flour a cake pan.2. Cream the butter and sugar together until light and fluffy.
3. Add the eggs one at a time, mixing well after each addition.
4. In a separate bowl, combine the flour and baking powder, then alternate adding it to the batter with the milk. Mix until smooth.
5. Pour the batter into the prepared pan and bake for 30-35 minutes. Check for doneness with a toothpick.
6. Allow the cake to cool completely before filling.
7. Prepare the berry filling: lightly mash the berries and fold them into the whipped cream.
8. Slice the cake in half and spread the berry filling on the bottom layer. Place the top layer on.
9. Whip the heavy cream, then add the powdered sugar and vanilla sugar. Frost the cake with the whipped cream.
10. Decorate the cake with fresh berries and refrigerate before serving.
