This delicious gooseberry paste is a perfect addition to various baked goods and desserts. It's easy to make and particularly delightful on top of whipped cream or spread on bread.
Preparation Time: 1 hour
Serving Size: Approximately 500 g

Ingredients:

- 450 g gooseberries
- ½ dl water
- Zest of one lemon
- ½ dl lemon juice
- 65 g butter
- 225 g sugar
- 2-3 eggs

Instructions:

1. Boil the gooseberries in water with lemon zest for about 10 minutes until softened.
2. Pass the gooseberries through a sieve to remove skins and seeds.
3. Place the gooseberry puree, lemon juice, butter, and sugar in a double boiler or a heat-proof bowl set over simmering water.
4. Heat the mixture until the butter melts and the mixture is smooth.
5. Whisk the eggs in a bowl and gradually add them to the mixture while whisking continuously.
6. Allow the mixture to thicken over low heat, stirring regularly with a whisk until it becomes paste-like (about 10-30 minutes).
7. Jar the paste in pre-warmed jars and let it cool.
