A tangy gooseberry dessert that combines sweet cream and milk with tart gooseberries, perfect for indulging on summer days. Preparation time: 30 minutes + cooling
Serving size: 6 servings
Ingredients:
- 450 g green gooseberries + a handful for garnish- 150 g elderflower cordial
- 2 egg yolks
- 1 tsp cornstarch
- 200 ml milk
- 50 g sugar
- 300 ml heavy cream
- 50 g sugar (for whipping cream)
Instructions:
1. Place the cleaned gooseberries and elderflower cordial in a saucepan. Cook for about 15 minutes until the berries are soft. Mix well and add the remaining gooseberries to the hot puree, allowing them to warm through. Cool the puree completely.2. In another saucepan, combine egg yolks, cornstarch, milk, and sugar. Cook while whisking continuously until the mixture thickens to a custard-like consistency. Be careful not to overcook.
3. Allow the custard to cool.
4. Whip the cream with the sugar until soft peaks form. Reserve 2/3 of the whipped cream for garnishing.
5. Fold the cooled gooseberry puree into the custard along with the 2/3 of the whipped cream. Mix well.
6. Divide the mixture into serving dishes. Top with the reserved whipped cream and whole gooseberries for garnish.
