Karviaiskääretorttu (Gooseberry Roll Cake)

A delightful Finnish roll cake filled with creamy mascarpone and tart gooseberry paste. Perfect for dessert or a sweet treat with coffee!Preparation time: 30 minutes

Ingredients:
- 1/2 dl all-purpose flour
- 1/2 dl cornstarch
- 3 tbsp cocoa powder
- 1 tsp baking powder
- 4 eggs
- 1 dl sugar
- 1 can mascarpone cheese
- 2-2½ dl gooseberry paste
Instructions:
1. Preheat your oven to 200°C (392°F).
2. In a bowl, combine the all-purpose flour, cornstarch, cocoa powder, and baking powder.
3. In a separate bowl, whisk the eggs and sugar together until thick and pale.
4. Sift the dry ingredients into the egg mixture and gently fold until smooth.
5. Spread the batter evenly onto a baking sheet lined with parchment paper.
6. Bake in the center of the oven for about 10 minutes, or until the cake is set.
7. While the cake is baking, whip the mascarpone cheese until fluffy and mix in the gooseberry paste.
8. Once the cake is baked, invert it onto a sugared piece of parchment paper and carefully remove the bottom paper.
9. Allow the cake to cool slightly, then spread the gooseberry mascarpone mixture over the top and roll it up tightly.
10. Let the roll cake rest in the refrigerator overnight to enhance the flavors before serving.
