Ingredients

- 1 ¼ cups gooseberries
- 2 cups apple juice
- 2 ½ tablespoons potato starch
- Sugar to taste

Instructions

1. Measure the apple juice and potato starch into a saucepan and mix until smooth.
2. Heat the mixture over medium heat, stirring constantly with a whisk until the pudding comes to a boil.
3. Remove the pudding from the heat and allow it to cool.
4. Once cooled, fold in the gooseberries.
5. Sprinkle sugar on top to taste.
