A delicious and moist carrot cake enhanced with tangy cranberries, perfect for coffee breaks or dessert.
Preparation Time: 1 hour
Serving Size: 12 pieces

Ingredients:

- 250 g grated carrots
- 100 g cranberries (fresh or frozen)
- 150 g sugar
- 2 dl all-purpose flour
- 1 dl almond flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 eggs
- 1 dl canola oil
- 1 tsp vanilla sugar
- Powdered sugar (for decoration)

Instructions:

1. Preheat the oven to 175 °C (350 °F).
2. Grate the carrots finely.
3. In a bowl, mix together the sugar, eggs, and canola oil. Whisk the mixture until fluffy.
4. Add the grated carrots and cranberries to the mixture.
5. In another bowl, combine the all-purpose flour, almond flour, baking powder, cinnamon, and salt.
6. Fold the dry ingredients into the wet mixture until well combined.
7. Pour the batter into a greased pie dish.
8. Bake in the oven for about 40-45 minutes, until the cake is golden brown and cooked through.
9. Allow to cool and dust with powdered sugar before serving.
