Ingredients:
- 4 lamb filets
- 300 ml broth
- Olive oil
- Butter
- Thickener (as needed)
- 1 tsp red balsamic vinegar
- 100 ml red wine
- 200 g bacon
- Salt
- Pepper
- 100 ml strong coffee
Instructions:
1. Clean the lamb filets and cut them into about 3 cm thick slices.
2. Flatten the filets into thick medallions and wrap each in a slice of bacon, securing with a toothpick if necessary.
3. Drizzle the filets with olive oil and season with salt and pepper.
4. In a hot skillet, cook the filets in butter until they are beautifully golden brown.
5. Remove the filets from the skillet and keep them warm.
6. In the same skillet, add the red wine and let it simmer for a moment to evaporate the alcohol.
7. Add the broth, coffee, and balsamic vinegar, and simmer the sauce until it thickens slightly.
8. If necessary, thicken the sauce with a thickener and season with salt and pepper to taste.
9. Serve the lamb filets with the sauce drizzled over them.
