Description: A delightful pasta dish featuring caramelized onions, garlic, and anchovies, perfect for a comforting meal.

Serving Size: 2 servings
Ingredients:
- 75 – 100 g pasta
- 150 g onion (peeled)
- 1 clove garlic
- 1 bay leaf
- 2 – 4 anchovy fillets (in oil)
- Pinch of sugar
- Good olives to taste
- Black pepper
- Olive oil for frying
- Sprigs of thyme
Instructions:
1. Slice the onions into thin strips.
2. Bring water to a boil for the pasta and add a generous splash of olive oil to a pan over medium heat.
3. Add the sliced onions to the pan and sauté for about 5 minutes, stirring to prevent burning.
4. Lower the heat and add a pinch of sugar, minced garlic, and initially two chopped anchovy fillets. Add the bay leaf and half of the thyme. Cook for another 5 minutes.
5. Cook the pasta in salted water until al dente.
6. Add a small splash of water and the olives to the pan, and simmer until the liquid has evaporated and the onions are tender.
7. Taste and add more anchovies if needed.
8. Drain the pasta, reserving a little cooking water.
9. Add the pasta to the pan and mix well. If needed, thin with a drop of cooking water.
10. Grind black pepper on top, tear in the remaining thyme leaves, and finish with a drizzle of olive oil.
11. Serve immediately while hot!
