Ingredients:
- 1 egg white- 1 teaspoon coffee essence or 2 teaspoons strong cold coffee
- 1 tablespoon finely chopped blanched almonds (or almond flour)
- A pinch of baking powder
- 75 grams sugar
Instructions:
1. Preheat the oven to 140°C (284°F).2. Whip the egg white until stiff peaks form. Gradually add sugar while continuing to whisk.
3. In a separate bowl, mix together the baking powder, almond flour, and coffee.
4. Gently fold the dry ingredients into the meringue mixture.
5. Drop small spoonfuls of the batter onto a baking tray.
6. Sprinkle the remaining sugar on top.
7. Bake for about 40 minutes.
8. Allow to cool before serving.
