A delicious grilled chicken skewer dish served with pasta. Perfect for a summer barbecue!
Preparation Time: 20 minutes (plus marinating time)
Serving Size: 4 servings
Ingredients:
- 400 g pasta
- 0.01 dl lime juice
- 1 red bell pepper
- 1 tbsp sweet chili sauce
- 200 g unseasoned chicken strips
- Jarred artichoke hearts
- Olive oil
- 1 tsp black pepper, coarsely ground
Instructions:
1. Remove the stem and seeds from the red bell pepper and cut it into small pieces.
2. In a bowl, mix together lime juice, sweet chili sauce, black pepper, and olive oil to create the marinade.
3. Add the chicken strips, bell pepper, and artichoke hearts to the marinade. Cover and let marinate in the refrigerator overnight if possible.
4. Soak wooden skewers in warm water for a while to prevent burning.
5. Thread the marinated ingredients onto the skewers and grill or bake until the chicken is fully cooked.
6. Cook the pasta according to package instructions and serve the skewers alongside the pasta.
