Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 200 g mushrooms, sliced
- 400 g crushed tomatoes
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 100 g grated Parmesan cheese
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until soft.
3. Add minced garlic and diced bell pepper, cooking for about 2-3 minutes.
4. Add sliced mushrooms and cook for a few more minutes until the mushrooms are tender.
5. Pour in the crushed tomatoes, add oregano, salt, and black pepper. Let the sauce simmer on low heat for about 10 minutes.
6. Combine the cooked pasta with the sauce, mixing well. Add reserved pasta water if needed to achieve the desired consistency.
7. Serve the pasta topped with grated Parmesan cheese and fresh basil.
