Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook spaghetti in salted water according to package instructions. Drain the pasta, reserving a little cooking water.
2. Heat a frying pan over medium heat and add bacon or pancetta. Cook until crispy. Add minced garlic and sauté for another minute.
3. In a bowl, whisk together eggs and grated Parmesan cheese. Add a bit of black pepper and mix well.
4. Add the drained pasta to the frying pan with the bacon and mix. Remove the pan from heat.
5. Pour the egg mixture over the pasta and stir quickly to ensure the eggs cook slightly in the warm pasta. Add reserved cooking water if the mixture is too dry.
6. Taste and adjust with salt and black pepper if needed.
7. Serve immediately with fresh parsley on top.
