Ingredients:
- 300 g pasta (e.g., tagliatelle or spaghetti)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until soft, about 1-2 minutes.
3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
4. Pour the cream into the spinach and stir well. Allow the sauce to simmer on low heat for about 5 minutes.
5. Add the grated Parmesan cheese to the sauce and stir until melted. Season with salt and pepper.
6. Combine the drained pasta with the sauce. Toss and add a bit of reserved cooking water if needed to achieve the desired consistency.
7. Serve immediately and garnish with fresh basil if desired.
