A delicious and nutritious cabbage-lentil stew that is perfect for warming up and filling you up. It’s easy to make and suitable for a vegetarian diet. Preparation time: 45 minutes
Serving size: 4-6 servings
Ingredients:
- 1 cup green lentils (dry)
- 1 medium onion, chopped
- 1/4 cup olive oil
- 2.2 lbs cabbage, chopped
- 2 tsp black pepper
- 2 tbsp paprika
- 1 tbsp sugar/maple syrup/honey
- 1 vegetable bouillon cube
- 1 lb carrots, chopped
- 1 tsp white pepper
Instructions:
1. Chop the cabbage, carrots, and onion into small pieces.
2. Heat the olive oil in a large pot over medium heat.
3. Add the chopped onion and sauté until soft.
4. Add the cabbage, carrots, and vegetable bouillon cube to the pot. Stir well.
5. Pour in about 2 cups of water and bring to a boil.
6. Add the lentils, black pepper, paprika, sugar/maple syrup/honey, and white pepper.
7. Reduce the heat and let the stew simmer on low for about 30 minutes until the lentils and vegetables are tender.
8. Taste and adjust seasoning with salt or spices if needed.
9. Serve warm, preferably with bread.
