Ingredients:
- 400 g pasta (e.g., spaghetti)- 150 g bacon or pancetta
- 3 egg yolks
- 100 ml cream
- 100 g grated Parmesan cheese
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente.2. Cut the bacon or pancetta into small pieces and fry in a pan over medium heat until crispy.
3. In a bowl, mix the egg yolks, cream, and grated Parmesan cheese. Add salt and black pepper to taste.
4. Once the pasta is cooked, drain it, reserving a bit of the cooking water.
5. Add the pasta to the pan with the bacon and mix well. Remove the pan from heat.
6. Quickly add the egg mixture to the pasta, stirring to combine so the yolks don’t scramble. If needed, add a little reserved cooking water to achieve a creamy consistency.
7. Serve immediately, garnished with fresh parsley and extra Parmesan cheese if desired.
