Serving Size: 4 servings
Ingredients:
- 300 g spaghetti
- 150 g pancetta or bacon
- 2 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions.
2. While the spaghetti is cooking, heat a skillet over medium heat and cook the pancetta or bacon until crispy. Add the minced garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
4. Once the spaghetti is cooked, drain it, reserving a bit of the cooking water. Add the spaghetti to the skillet with the pancetta and mix well.
5. Remove the skillet from the heat and quickly stir in the egg mixture with the spaghetti. Mix rapidly to prevent the eggs from scrambling. Add reserved cooking water as needed to create a creamy sauce.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese on top.
