Crispy Rye Crackers

A delicious and crunchy cracker that's easy to make with a pasta machine. Perfect addition to your holiday cheese platter. Preparation Time: 1 night + 7 minutes baking time
Serving Size: About 30 crackers
Ingredients:
- 4 dl water - 5 dl rye bread flour
- 1 tsp fine sea salt
- 2 tbsp rapeseed oil
- 3-4 dl fine wheat flour
Instructions:
1. Boil the water and let it cool completely. 2. Add salt and oil to the cooled water.
3. Mix in the rye bread flour until well combined.
4. Cover the dough with a clean kitchen towel and let it rest at room temperature overnight or for at least a couple of hours.
5. If necessary, add more flour until you achieve a typical bread dough ball consistency.
6. Cut pieces from the dough ball and roll them out thinly using a pasta machine.
7. Place each cracker sheet on a baking tray lined with parchment paper, ensuring they are close but not overlapping.
8. Bake in the oven at 225–250°C (437–482°F) for about 5-7 minutes, until the surface is golden brown and crispy.
9. Remove the sheets and let them cool on a wire rack.
10. Break the cooled sheets into appropriately sized pieces and store in an airtight container.
