Juhannuskakku (Midsummer Cake)

A delicious and refreshing cake perfect for celebrating Midsummer. Preparation Time: 45 minutes + chilling time
Serving Size: 12 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 400 g mascarpone cheese
- 2 dl heavy cream
- 1 dl sugar
- 1 tsp vanilla sugar
- 300 g fresh strawberries
- 2 tbsp lemon juice
- 2 tbsp powdered sugar
- 1 dl fresh mint for garnish
Instructions:
1. Crumble the biscuits and mix them with the melted butter. Press the mixture into the bottom of a springform pan to form a solid base.
2. In a bowl, whip the mascarpone cheese, heavy cream, sugar, and vanilla sugar until smooth and fluffy.
3. Wash and slice the strawberries. Mix the strawberries with lemon juice and powdered sugar.
4. Evenly spread the mascarpone mixture over the biscuit base.
5. Arrange the citrus-marinated strawberries on top of the mascarpone layer.
6. Allow the cake to chill in the refrigerator for at least 3 hours, preferably overnight.
7. Garnish with fresh mint before serving.
