Creamy Spinach Soup

A creamy and delicious spinach soup that warms the heart and body. Perfect as a starter or a light main dish.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g fresh spinach
- 1 medium onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp olive oil
- Salt and black pepper to taste
- Lemon juice (optional)
Instructions:
1. Finely chop the onion and garlic.
2. Heat the olive oil in a pot and sauté the onion and garlic over medium heat for about 5 minutes until soft.
3. Add the washed and dried spinach to the pot. Cook until the spinach has wilted.
4. Pour the vegetable broth into the pot and bring to a boil.
5. Let the soup simmer for about 10 minutes.
6. Blend the soup until smooth using a blender or an immersion blender.
7. Stir in the cream and season with salt, black pepper, and optional lemon juice. Heat once more but do not boil.
8. Serve warm.
