A deliciously sweet and tangy BBQ rib recipe featuring apricots for a unique twist.
Preparation Time: 1 hour (plus overnight marinating)

Ingredients:

- 2 lbs pork ribs
- 1 cup BBQ sauce
- 3 apricots, pitted and chopped
- 1 can (14 oz) crushed tomatoes
- 1/2 cup red wine
- 2 tsp honey
- Pinch of salt

Instructions:

1. In a saucepan, combine the chopped apricots, BBQ sauce, crushed tomatoes, red wine, honey, and salt.
2. Cook over medium heat for about 45 minutes, stirring occasionally.
3. Allow the mixture to cool slightly, then blend until smooth using an immersion blender.
4. Brush the pork ribs generously with the apricot BBQ sauce and marinate in the refrigerator overnight.
5. Preheat your oven to 300°F (150°C). Place the marinated ribs in a baking dish and cover with foil. Bake for about 4 hours.
6. For extra flavor and color, finish the ribs on a hot grill for a few minutes before serving.
