Ingredients:
- 1 kg pork short ribs - 2 tablespoons Tex-Mex spice blend
- 100 ml BBQ sauce
- 400 g mushrooms
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 150°C (300°F). 2. Rub the Tex-Mex spice blend all over the short ribs.
3. Place the ribs in a baking dish and bake in the oven for about 2.5 hours, until tender.
4. Prepare the BBQ sauce by simmering the ingredients in a pot over medium heat for about 10 minutes.
5. Remove the ribs from the oven and brush them with BBQ sauce.
6. Heat a grill or grill pan.
7. Toss the mushrooms with olive oil, salt, and pepper.
8. Grill the mushrooms on skewers for about 5-7 minutes, until golden brown.
9. Serve the ribs and grilled mushrooms together.
