Ingredients:
- 400 g pasta (such as spaghetti or fettuccine)
- 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. Reserve a bit of the cooking water and drain the pasta.
2. In a skillet over medium heat, add the bacon or pancetta. Cook until crispy, about 5-7 minutes.
3. Add the minced garlic to the skillet and sauté for an additional minute until golden. Remove the skillet from heat.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Add black pepper to taste.
5. Add the drained pasta to the skillet with the bacon and garlic. Mix well.
6. Pour the egg mixture over the pasta and stir quickly to cook the eggs with the warmth of the pasta. If needed, add a little reserved cooking water to create a creamy sauce.
7. Serve immediately, garnished with fresh parsley if desired.
