Ingredients:

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 carrots, diced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 100 grams peas (fresh or frozen)
- Fresh parsley for garnish

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic. Sauté until the onion is soft.
2. Add the diced carrots, potatoes, bell pepper, and zucchini. Cook for about 5 minutes until the vegetables start to soften.
3. Pour in the vegetable broth and add thyme, salt, and black pepper. Bring to a boil and then reduce the heat. Let the soup simmer for about 15-20 minutes until the vegetables are tender.
4. Stir in the peas and cook for an additional 5 minutes.
5. Serve the soup garnished with fresh parsley.
